A white crystalline powder with a faint ammonia odor. A volatile salt that decomposes into CO₂, NH₃, and H₂O upon heating. Used as a leavening agent, pop-corn and cracker baking, food additive, lab reagent, and buffer for protein digestion and lyophilization
